The Viral Pickle Sandwich
I’ve seen this sandwich all over TikTok and even on Good Morning America. It looked delicious so I had to give it a try.
The inspiration comes from a sub shop in New Jersey. The creator of the sandwich made it for her mom because she’s diabetic. A customer saw it and asked for one, then it took off from there.

Since there’s no bread that makes it low carb. For anyone following Weight Watchers, it’s also low in points.
The Ingredients
Whole pickles: You want to use a large whole pickle, the bigger the better. It’s replacing a sub bun so it will be holding lunch meat, cheese, and other toppings.
Lunch meat: I used 6 oz. turkey breast. I like it because it tastes good and it’s zero points.
Cheese: I used part-skim mozzarella cheese slices. I only used 1/2 cheese slice for each pickle sandwich to keep it low in points.
Lettuce: To make it easy I bought shredded iceberg lettuce. I mixed together light mayonnaise, red wine vinegar, oregano, and lettuce. This topping with the dressing adds a ton of flavor.
Red onion: The onion gives it a pop of color and flavor.

How to Make the Viral Pickle Sandwich
The most important thing is that you use a large whole pickle.
Cut the pickle in half lengthwise. Core out the seeds and part of the inside of the pickle. You want enough room to fill it with the ingredients.
Mix together the shredded lettuce, light mayonnaise, red wine vinegar, and oregano in a small mixing bowl.
Place 3 oz. of turkey breast on one half of the pickle. Add a half slice of cheese, then the red onion slices.
Top it off with half of the shredded lettuce mixture. Place the other pickle half on top and your sandwich is ready.
This recipe makes enough for two pickle sandwiches. It can easily be doubled for more.
Other Tips
You don’t have to limit yourself to just turkey. You can use ham or turn it into an Italian “sub”.
Try additional toppings like roasted red peppers, tomatoes, green onions, or spinach.
Switch it up with other condiments. Try mustard, honey mustard, pesto, or chipotle mayonnaise.

Ingredients
- 2 large whole pickles
- 1 cup iceberg lettuce, shredded
- 1 tablespoon light mayonnaise
- 1 teaspoon red wine vinegar
- 1/2 teaspoon oregano
- 6 oz. Boar's Head ovengold turkey
- 1 slice part-skim mozzarella cheese
- Red onion, sliced
Instructions
- Slice the pickles in half lengthwise. Core the seeds and part of the inside of the pickle.
- Add the shredded lettuce, light mayonnaise, red wine vinegar, and oregano to a small mixing bowl. Stir together.
- Add half of the turkey to a pickle. Top the turkey with cheese, red onion, and half of the lettuce mixture. Top with the other pickle half. Repeat the steps for the second pickle.
