Lemon Blueberry Parfait Cups
These parfaits are perfect for a light summer dessert!
This dessert is easy to make and requires no baking. Plus each dessert cup is only 2 points.

I bought 4 ounce dessert cups from Amazon. I use them for a lot of desserts because they are perfect for portion control. I love them for low point banana pudding.
The Ingredients
Blueberries: I bought a pint of blueberries to make an easy and delicious sauce.
Lemon Pudding: To keep it low in points I bought sugar free lemon pudding and pie filling. The whole box is only 4 points.
Skim Milk: This is what I mixed with the lemon pudding. 16 oz. of skim milk was 5 points.
Cool Whip: I purchased fat-free Cool Whip. The majority of the points in this recipe comes from the Cool Whip, 8 oz. is 14 points.
Granulated Splenda: I used 1 tablespoon to mix with the blueberries. It helped to bring out the sweetness of the blueberries.
Cornstarch: I added 1 teaspoon of cornstarch to the blueberries to help thicken it up.

How to Make Lemon Blueberry Parfait Cups
I started by making the blueberry sauce because you want it to cool before making the parfaits.
Add the blueberries, Splenda, and cornstarch to a saucepan. Bring to a simmer, reduce heat and cook for 5 minutes. Use a fork to break down the blueberries.
Let the blueberry mixture cool completely before making the parfaits. I poured the blueberries into a bowl and placed them in the fridge while I got the pudding ready.
Add the instant lemon pudding to a medium mixing bowl. Pour in 2 cups of skim milk and whisk for 2 minutes.
Lay out 10 dessert cups.
I used this piping bag set for the lemon pudding and Cool Whip. It made it much easier to get the ingredients into the dessert cups. You can also use fill a ziplock bag, seal it then cut the corner.
There are 5 layers to the parfaits. I did Cool Whip, lemon pudding, blueberries, lemon pudding, and Cool Whip.
If you’re saving the parfait cups for later simply cover them and place them in the fridge.

- 1 teaspoon cornstarch
- 1 (1.34 oz.) box sugar free lemon pudding
- 2 cups skim milk
- 8 oz. fat-free Cool Whip
Instructions
- Add the blueberries, Splenda, and cornstarch to a saucepan. Bring to a simmer, reduce heat and cook for 5 minutes. Use a fork to break up the blueberries. Let the blueberry mixture cool completely.
- Add the lemon pie and skim milk to a medium mixing bowl. Whisk for 2 minutes.
- Lay out 10 dessert cups.
- Fill one piping bag with the lemon pudding and another piping bag with the Cool Whip.
- Layer each dessert cup with Cool Whip, lemon pudding, the blueberry mixture, lemon pudding, and another layer of Cool Whip. Repeat until all 10 dessert cups are filled.
