Western Skillet
This Western Skillet has the same ingredients as a delicious Western omelet.
There’s onion, green peppers, ham, eggs, and cheese.
With the addition of potatoes it makes it a filling and delicious breakfast!

Everything is cooked in one pan making every bite full of flavor.
The Ingredients
Eggs: You can’t have a breakfast skillet without eggs. I used four eggs so there was one egg per serving.
They’re a good source of protein which has many health benefits when trying to lose weight.
Protein helps to maintain and build muscle. It also helps to reduce your appetite.
Green Bell Pepper: Besides adding flavor they’re also good for you. They’re rich in vitamin C and high in iron, which can help your body absorb more iron.
Onion: This is another important ingredient in a Western omelet. Onions add tons of flavor to any dish they’re in.
Cubed Ham: Since it’s high in sodium I try to limit my ham intake. Ham does contain protein and other health benefits so it does have some advantages.
Cheese: To keep it low in points I used reduced-fat cheddar cheese. You can use any type of reduced-fat cheese you have.
Seasonings: Garlic powder, onion powder, salt, and black pepper are what I used for this dish.

How to Make a Western Skillet
First you want to peel and cube the potato.
Chop the onion and green pepper.
Heat a nonstick skillet over medium heat and add the potatoes, onion, and green pepper. Season with garlic powder, onion powder, salt, and pepper.
Depending on the size of the potatoes they should take 10 minutes to cook. During the last two minutes of the cooking time add the cubed ham.

Once the potatoes are cooked make 4 holes in the mixture to add the eggs. I used a measuring cup (1/3 cup) to make the holes.

Next, add the shredded cheese and cover the pan.

I let my eggs cook for 4 minutes. I like the yolk to still be runny. If you like it more cooked you can adjust the time.
Once the eggs were cooked I used a spatula to cut it into four servings.
You can serve it as is or top it with a little hot sauce.
These cast iron skillets are so cute to serve it in! It would be just like you’re at a breakfast diner.
Serving Suggestions
Since one serving is only 3 points I like to have mine with a piece of low point toast.
If you’re extra hungry you can have 2 servings for only 7 points.
Western Skillet

Ingredients
- 14 oz. russet potato (peeled and cut into cubes)
- 1/4 cup yellow onion, chopped
- 1/4 green bell pepper, chopped
- 1/4 cup cubed ham
- 1/4 cup reduced-fat cheddar cheese, shredded
- 4 eggs
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat a nonstick skillet over medium heat. Spray with cooking spray then add the potatoes, onions, and green pepper.
- Season with the garlic powder, onion powder, salt, and pepper.
- Cook for 10 minutes, stirring occasionally. During the last two minutes of cooking time stir in the ham. (Cooking time for the potatoes will depend on the size. Make sure to test the potatoes before adding the eggs.)
- Make four pockets in the potato mixture. Add one egg to each pocket.
- Sprinkle the shredded cheese over the potato mixture. Cover with a lid and let the potatoes cook for 3 minutes, or until the egg white is set.
