Bacon and Potato Frittata

This delicious frittata is filled with potatoes, bacon, and eggs. It’s a hearty meal that’s low in points.

It’s also budget friendly – another ten dollar meal!

A frittata is similar to a quiche, but it doesn’t have a crust. That helps to keep it low in points, which is a bonus.

The Cost:

Most of the ingredients in this frittata aren’t expensive, which makes it a perfect ten dollar meal.

The most expensive thing was the bacon. At Kroger there is a 12 oz. pack of bacon for only $3.99. I had bacon for the frittata and plenty leftover for sandwiches or breakfast.

From the produce department I grabbed a red pepper ($1.59) and a potato ($.70).

After that I went to the dairy department and got reduced-fat cheddar cheese for $2.49. I also bought eggs for $1.69.

The total I spent for this recipe was $10.46. Technically I went over $10, but not by much.

Some things I don’t include in the price are what I consider pantry staples – garlic powder, onion powder, salt, and pepper. I also used milk in the frittata, which most people usually have on hand.

How to Make the Bacon and Potato Frittata:

The first thing I did was cook the bacon. I used three slices, which is enough to give it that bacon flavor while keeping the points low.

Once the bacon was cooked I set it on a paper towel and removed the grease from the pan.

Using the same nonstick pan, I added the potatoes and onion. Season it with garlic powder, onion powder, salt, and pepper. Cook the potatoes for 5 minutes, then add the red pepper.

Let the vegetables cook for 2 minutes, then turn off the heat.

Add the eggs, milk, and seasonings to a bowl and whisk together.

Spray a pie pan with nonstick cooking spray, then add the potato mixture. Top the potatoes with cheese, then pour in the egg mixture.

Bake for 35 minutes or until the eggs in the middle are set.

This recipe makes 6 servings. It reheats well, so it’s great for meal prep.

Ingredients

  • 6 eggs
  • 1/2 cup skim milk
  • 3 slices bacon
  • 1 medium russet potato, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 yellow onion, chopped
  • 1/2 cup reduced-fat cheddar cheese
  • Garlic powder, onion powder, salt, and pepper

Instructions

  • Preheat oven to 350 degrees F. Spray a pie pan with nonstick cooking spray.
  • Cook the bacon and chop it into small pieces.
  • Add the potatoes and onion to a nonstick pan. Season with garlic powder, onion powder, salt, and pepper then cook over medium heat for 5 minutes.
  • Add the red pepper and cook for 2 more minutes.
  • In a medium mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  • Pour the potato mixture into the pie pan in an even layer. Top the potatoes with the cheddar cheese, then pour the egg mixture over it.
  • Bake for 35 minutes, or until the eggs in the middle have set.
