Greek Breakfast Bowl
This delicious and filling breakfast is only 1 point! If you’re watching your carbs it’s only 8g net carbs per serving.
It’s also a great recipe for meal prep.

This breakfast is also high in protein, which will help keep you full longer.
There are 18 grams of protein in 3 eggs plus there’s protein in the Greek yogurt.
Spinach is also in the Greek breakfast bowl. It’s high in fiber so it helps with digestion. It’s also rich in iron, vitamins C and E, potassium, and magnesium.
The cherry tomatoes are high in vitamins A, C, E, and potassium.
Red onions play a big role in a lot of Greek food. I wanted a lighter taste of onion so I went with a shallot. They’re peppery like a red onion when raw, but once cooked they have a sweeter taste.

How to Make a Greek Breakfast Bowl
The first thing I got started was the tzatziki sauce.
Add fat-free Greek yogurt, lemon juice, dill, garlic powder, shredded cucumber, salt, and pepper to a small bowl.
Stir together and place in the fridge until you’re ready to eat it. The longer it sits in the fridge, the better it will taste.
Chop the shallot, cherry tomatoes, and spinach.
Whisk together the eggs.
Spray a frying pan with nonstick cooking spray and add the shallot. Let that cook for 1 minute, then add the tomatoes and spinach.
Cook for 2 minutes then add in the eggs. Use a rubber spatula to move the eggs around. Once they’re almost cooked add the feta cheese.
Add the eggs to a bowl and top it with a spoonful of the tzatziki sauce.
There is more than one serving of the tzatziki sauce. Cover and refrigerate whatever is left over.
Serving Suggestions
Since this is only a 1 point breakfast, the possibilities are endless.
You can serve it with toast or an English muffin.
Pita bread or naan flatbread go well with the Greek Breakfast Bowl.
You can keep it low in points and serve it with a bowl of fruit.
Greek Breakfast Bowl

Ingredients
- 3 eggs
- 1 tablespoon shallot, chopped
- 1/4 cup cherry tomatoes, chopped
- 1/4 cup baby spinach, chopped
- 2 tablespoons reduced-fat feta cheese
- Salt and pepper, to taste
For the tzatziki sauce:
- 1/2 cup fat-free Greek yogurt
- 1/2 tablespoon lemon juice
- 1/2 teaspoon dill
- 1/4 teaspoon garlic powder
- 1/4 cup shredded cucumber
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Add the Greek yogurt, lemon juice, dill, garlic powder, shredded cucumber, salt, and pepper to a small bowl. Mix together, cover, and refrigerate.
- Spray a frying pan with cooking spray and add the shallot. Cook for 1 minute.
- Add the tomatoes and spinach to the frying pan and cook for 2 minutes.
- Pour the eggs into the frying pan and season with salt and pepper. Use a rubber spatula to move the eggs around. When they're almost cooked add in the feta cheese.
- Pour the egg mixture into a bowl and top with a tablespoon of tzatziki sauce.
