Taco Hand Pies
These easy hand pies are filled with a delicious beef taco filling.
There’s also cheese, corn, and black beans. Each bite is full of flavor.

The Ingredients
Biscuits: I used Pillsbury buttermilk flaky layers biscuits. They’re only 4 points each.
I used a rolling pin to flatten the biscuit and used it as a dough.
Here is what I bought:

Ground Beef: To keep it lower in points I used 96% lean ground beef.
Cheese: I used reduced-fat Mexican cheese.
Taco Seasoning: You need 1 tablespoon of taco seasoning since we’re only using 1/2 lb. of ground beef.
Corn: This adds a nice little crunch to the taco hand pies.
Black Beans: I love using black beans in recipes because they are 0 points, high in fiber, and high in protein.

How to Make Taco Hand Pies
Brown and break up the ground beef. Drain any grease.
Add one tablespoon of taco seasoning and 1/3 cup of water. Bring to a simmer, reduce heat and cook until thickened.
Stir in the corn and black beans then let the mixture cool slightly.
Place a biscuit on a clean work surface sprinkled with a little bit of flour. Use a rolling pin to flatten the biscuit.
Add a spoonful to the taco mixture and a pinch of Mexican cheese to one side of the flattened biscuit.

Fold over the biscuit and use a fork to seal the edges closed.

Whisk together 1 egg with 1 tablespoon of water. Brush the top of the biscuits with the egg wash.
Bake at 375 degrees F. for 10-14 minutes, until each pie is golden.
Serving Suggestions
I like to serve my Taco Hand Pies with fat free sour cream and taco sauce.
You could also serve it with avocado slices, guacamole, Mexican rice, or Pico de Gallo.

- 1/2 cup reduced-fat Mexican cheese, shredded
- 1 egg plus 1 tablespoon of water whisked together
Instructions
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
- Brown and break up the ground beef. Drain any grease.
- Add the taco seasoning and water. Bring to a simmer, reduce heat and cook until thickened.
- Stir in the corn and black beans then let the mixture cool slightly.
- Place a biscuit on a clean work surface sprinkled with flour. Use a rolling pin to flatten the biscuit.
- Add a spoonful of the taco mixture and a pinch of Mexican cheese to one side of the flattened biscuit.
- Fold over the biscuit and use a fork to seal the edges closed. Brush the top of the biscuit with egg wash. Repeat with the remaining 9 biscuits.
- Bake for 10-14 minutes, until each pie is golden.
