Taco Lasagna
This Taco Lasagna is delicious, easy to make and low in points!

Taco Lasagna is also a family friendly meal.
Here’s what you need to make Taco Lasagna:
- 95% lean ground beef
- Onion
- Garlic
- Taco seasoning
- Tortillas
- Salsa
- Reduced-fat Mexican cheese, shredded
I used Ole Xtreme high fiber tortillas because they’re only 1 point each. They’re usually my go-to tortilla.
You could also add some vegetables to the Taco Lasagna. Corn is a good option, black beans are great too.
Black beans and corn are 0 points with the current plan.
There are 3 layers to the Taco Lasagna. Each layer uses 1 1/4 tortilla. I used a square 8×8 baking dish so the circle tortillas needed to be cut up.
I cut each tortilla into four pieces. I put one piece in each of the corners of the baking dish, then used a fifth piece of tortilla for the center.

The first two layers of the Taco Lasagna are tortillas, salsa, seasoned beef and reduced-fat Mexican cheese.
For the first two layers I used 1 cup of the Mexican cheese, a half cup for each layer.
Once it was time for the final layer I did tortillas, salsa and one whole cup of Mexican cheese.
I didn’t want the top layer of tortillas to dry out so I covered them in plenty of cheese. 🙂
Of course you can eat the Taco Lasagna as it is when it comes out of the oven, or you can add cilantro, sour cream or even green onions. Whatever you like!

Taco Lasagna

Ingredients
- 1/2 lb. 95% lean ground beef
- 1/2 yellow onion, chopped
- 1 teaspoon minced garlic
- 1 tablespoon taco seasoning
- 1/3 cup water
- 4 Ole Xtreme high fiber tortillas
- 3/4 cup salsa
- 2 cups reduced-fat Mexican cheese, shredded
Instructions
- Preheat oven to 350 degrees F.
- Start to brown the ground beef. Once it's just slightly pink add the onion and garlic. Drain any grease.
- Add the water and taco seasoning. Simmer for 5 minutes or until most of the liquid is absorbed.
- While the ground beef is cooking cut each tortilla into 4 pieces.
- Spray an 8×8 baking dish with no stick cooking spray.
- Add five pieces of the tortillas to the bottom of the pan, one in each corner and one in the center.
- Add 1/4 cup of salsa to the tortillas. Spread evenly across. Then add half of the seasoned beef.
- Add 1/2 cup of Mexican cheese.
- Repeat the layers again, tortillas, salsa, seasoned beef and Mexican cheese.
- For the final layer add tortillas, salsa and 1 cup of Mexican cheese.
- Bake for 20 minutes or until the cheese is completely melted.

Your recipe seem really good but your website loading is terrible. It takes forever to load and then it keeps refreshing in the middle of you reading a recipe.
