Creamy Tomato Soup

This Creamy Tomato Soup is low in points and has an extra boost of protein.

Instead of using heavy cream (which is high in points) I went with cottage cheese.

Don’t tune out yet if you don’t like cottage cheese, you can’t even tell that it’s in there. I ran it in the blender until it was smooth and creamy. You would never even know.

This soup is only 2 points per serving and each serving is about 2 cups.

The Ingredients

Fire Roasted Tomatoes: I used canned fire roasted tomatoes. I like using them more than regular diced tomatoes because they add more flavor.

Chicken Broth: You need 14.5 oz. of chicken broth. You can use regular, fat free, or low sodium.

Cottage Cheese: I used 1% low fat cottage cheese. I added 3/4 cup which was only 3 points.

If I would have used 1/2 cup of heavy cream it would have been a whopping 23 points!

Onion: This helps to add flavor to the soup. I like to use a yellow onion.

Fresh Garlic: I like using fresh garlic so much more than the stuff in the jar.

This is the garlic press I use. I like it because you don’t need to peel the garlic before using it.

Fresh Basil: I use a tablespoon of chopped basil in the soup and use some additional basil to garnish it.

How to Make Creamy Tomato Soup

In a medium pot melt the butter and add chopped onion and minced garlic. Cook for 3 minutes while stirring occasionally.

Add the fire roasted tomatoes, chicken broth, and fresh basil to the pot.

Bring it to a boil, reduce heat, cover and simmer for 30 minutes.

While that’s cooking I added the cottage cheese to a blender. Run it on high until it becomes creamy.

Let the soup cool slightly then add half of it to the blender. Run it on high until it’s blended. Add the remaining soup and run on high until it is thoroughly blended.

Serving Suggestions

Since this soup is only 2 points per serving there are plenty of things you could serve with it.

A low point grilled cheese sandwich is always a good option.

I make mine by using two slices of low point bread (1 point per slice), reduced fat American cheese (2 points), and I Can’t Believe It’s Not Butter spray. It’s a 4 point sandwich.

Another good idea is a low point salad.

Ingredients

  • 2 (14.5 oz) cans fire roasted tomatoes (don't drain)
  • 14.5 oz. chicken broth (if vegetarian use vegetable broth)
  • 1 teaspoon butter
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, sliced
  • 3/4 cup 1% low fat cottage cheese
  • Salt and pepper, to taste

Instructions

  • Melt the butter in a large pot. Add the chopped onion and minced garlic. Cook for 3 minutes stirring occasionally.
  • Add the fire roasted tomatoes, chicken broth, and fresh basil. Bring to a boil, reduce heat, cover and simmer for 30 minutes, stirring occasionally.
  • Add the cottage cheese to a blender and blend on high until smooth.
  • Let the soup cool slightly then add half of it to the blender with the cottage cheese. Blend on high. Add the remaining soup and blend on high until smooth.
  • Optional: Garnish with additional basil.
