Creamy Tomato Soup

Ingredients

  • 2 (14.5 oz) cans fire roasted tomatoes (don't drain)
  • 14.5 oz. chicken broth (if vegetarian use vegetable broth)
  • 1 teaspoon butter
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, sliced
  • 3/4 cup 1% low fat cottage cheese
  • Salt and pepper, to taste

Instructions

  • Melt the butter in a large pot. Add the chopped onion and minced garlic. Cook for 3 minutes stirring occasionally.
  • Add the fire roasted tomatoes, chicken broth, and fresh basil. Bring to a boil, reduce heat, cover and simmer for 30 minutes, stirring occasionally.
  • Add the cottage cheese to a blender and blend on high until smooth.
  • Let the soup cool slightly then add half of it to the blender with the cottage cheese. Blend on high. Add the remaining soup and blend on high until smooth.
  • Optional: Garnish with additional basil.
