Ingredients
2(14.5 oz)cans fire roasted tomatoes (don't drain)
14.5oz.chicken broth (if vegetarian use vegetable broth)
1teaspoonbutter
1yellow onion, chopped
2clovesgarlic, minced
1tablespoonfresh basil, sliced
3/4cup1% low fat cottage cheese
Salt and pepper, to taste
Instructions
Melt the butter in a large pot. Add the chopped onion and minced garlic. Cook for 3 minutes stirring occasionally.
Add the fire roasted tomatoes, chicken broth, and fresh basil. Bring to a boil, reduce heat, cover and simmer for 30 minutes, stirring occasionally.
Add the cottage cheese to a blender and blend on high until smooth.
Let the soup cool slightly then add half of it to the blender with the cottage cheese. Blend on high. Add the remaining soup and blend on high until smooth.
