Breakfast Pizzas

This is a fun, low point breakfast option!

Sometimes I get bored eating the same thing for breakfast. I like to mix it up and try new things.

That’s how I came up with these Breakfast Pizzas.

You can have one breakfast pizza for 3 points, or two for 5 points.

The Ingredients

English Muffins: I bought Thomas’ light multi grain English muffins. They’re lower in points than regular English muffins but still taste great.

They also contain more fiber than the regular English muffins. It’s good for you digestive health and can keep your blood sugar levels stable.

Eggs: I used 4 eggs so each English muffin was topped with one full egg.

Besides eggs having healthy fats they’re also full of protein, which helps you stay full longer.

Ham: I bought 96% fat free diced ham.

Cheese: To help keep the points low I used reduced-fat Mexican cheese. I used about 1 tablespoon of cheese for each muffin.

How to Make Breakfast Pizzas

Whisk 4 eggs in a medium mixing bowl. I season my eggs with salt, black pepper, and a pinch of garlic powder. Spray a nonstick pan with cooking spray and cook until no longer runny.

Cut each English muffin in half then toast. Lay the English muffins on a baking sheet.

Spritz the top of the English muffins with 0 point olive oil spray.

Top each English muffin with the scrambled eggs.

Next, top the eggs with the diced ham.

Add 1 tablespoon of reduced fat Mexican cheese to each English muffin.

Place under the broiler until the cheese melts.

Serving Suggestions

These Breakfast Pizzas pair well with a side of fruit or a fruit salad. It’s a great 0 point option.

Feel free to mix up the toppings on the pizza. You could easily turn it into a Western Pizza by adding green pepper and onion.

Instead of using ham you can try it with turkey sausage or bacon. Just make sure you check the points.

Not a fan of scrambled eggs? No problem! Use a fried egg or over medium egg.

  • 4 eggs (Scrambled and seasoned with salt, pepper, and garlic powder)
  • 1/4 cup diced ham
  • 1/4 cup reduced-fat Mexican cheese, shredded
  • 0 point olive oil spray

Instructions

  • Spray a nonstick pan with cooking spray and add the scrambled eggs. Cook until they are no longer runny.
  • Cut the English muffins in half and lightly toast. Place the toasted English muffins on a baking sheet and spray each one with olive oil spray.
  • Top each English muffin with scrambled eggs, diced ham, and one tablespoon of cheese.
  • Place under the broiler until the cheese melts.
