Beef and Cheese Crunchy Tacos

I made these tacos based on a craving I was having – mini tacos that you get in a restaurant/bar.

Let me tell you, they did not disappoint!

I didn’t make mine “mini”, instead I used Mission low fat extra thin tortillas. They’re only one point each, which was perfect.

The Ingredients

96% lean ground beef: I wanted beef tacos but I also wanted to keep it as low in points as possible.

I bought 1 lb. of ground beef. After cooking I was left with about 12 ounces of beef and I added 1 ounce to each taco.

Corn tortillas: The mini tacos use corn tortillas so that is what I went with.

Reduced fat Mexican cheese: I went with this since it’s lower in points than regular Mexican cheese. It still tastes great and melts easily.

Taco seasoning: Any packet of taco seasoning will work. I used Taco Bell taco seasoning.

This recipe is somewhat more of an idea than an actual recipe. I’m giving you all of the ingredients and measurements with the points calculated.

One thing that came in handy was using a food scale. It helped to weigh 1 ounce of the cooked ground beef for every taco.

With Weight Watchers, I find that I use my food scale every day. It comes in handy, especially with pasta.

I also recommend this chopper. I use it for salads, fruit, pico de gallo, and vegetables.

How to Make Beef and Cheese Crunchy Tacos

Start by cooking the ground beef. Once it’s broken up and no longer pink, drain any grease and add the taco seasoning.

Add the water and let cook according to the directions on the seasoning packet.

The corn tortillas work best if you place them in the microwave for about 10 seconds before filling them. That way they don’t rip or break.

Preheat a frying pan over medium heat.

Stuff each taco with 1 ounce of taco meat and 1/2 tablespoon of Mexican cheese.

Spray the frying pan with cooking spray and add three tacos (depending on the size of your pan). Let cook 2 for minutes.

Spray the top of the tacos with cooking spray then flip. Cook another 2 minutes, or until the taco shells are golden and crunchy.

Repeat until all of the tacos are made.

Serving Suggestions

You can keep these tacos low in points by adding some zero point toppings.

  • Chopped tomatoes
  • Jalapenos
  • Onions
  • Shredded lettuce
  • Cilantro

Fat free sour cream, Pico de Gallo, guacamole, and salsa are also great options, but could add points.

  • Break up and brown the ground beef. Once it's no longer pink, drain the grease and add the taco seasoning.
  • Add the water and cook according to the directions on the seasoning packet.
  • Place the tortillas in the microwave for 10 seconds before filling them. This helps so they don't rip or break.
  • Preheat a nonstick frying pan over medium heat.
  • Fill each taco with 1 ounce of taco meat and 1/2 tablespoon of cheese and close the taco shell.
  • Spray the frying pan with cooking spray and add three tacos (depending on the size of your pan). Let cook for 2 minutes.
  • Spray the top of the tacos with cooking spray and flip. Cook another 2 minutes, or until the taco shells are golden and crunchy. Repeat until all of the tacos are made.
