Bacon and Potato Frittata

Ingredients

  • 6 eggs
  • 1/2 cup skim milk
  • 3 slices bacon
  • 1 medium russet potato, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 yellow onion, chopped
  • 1/2 cup reduced-fat cheddar cheese
  • Garlic powder, onion powder, salt, and pepper

Instructions

  • Preheat oven to 350 degrees F. Spray a pie pan with nonstick cooking spray.
  • Cook the bacon and chop it into small pieces.
  • Add the potatoes and onion to a nonstick pan. Season with garlic powder, onion powder, salt, and pepper then cook over medium heat for 5 minutes.
  • Add the red pepper and cook for 2 more minutes.
  • In a medium mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  • Pour the potato mixture into the pie pan in an even layer. Top the potatoes with the cheddar cheese, then pour the egg mixture over it.
  • Bake for 35 minutes, or until the eggs in the middle have set.
