Roasted Potatoes with Feta

This delicious side dish combines crispy golden-brown potatoes with creamy, slightly tangy feta cheese.

It’s low in points and easy to make!

I love that potatoes are 0 points with the current plan (1/30/2025). They’re perfect for a filling side dish.

The Ingredients

Petite Gold Potatoes: These potatoes are a good source of fiber, vitamins, and minerals.

I left the skin on and cut each potato into four pieces.

Feta Cheese: I used regular feta cheese because it softens better than reduced-fat feta cheese.

Olive Oil: A drizzle of high-quality olive oil not only aids in the roasting process but also adds a layer of richness to the potatoes.

It helps the seasonings adhere to the potatoes and contributes to their crispiness.

Seasonings: I used oregano, garlic powder, salt, and black pepper to season the potatoes.

How to Make Roasted Potatoes with Feta

Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.

Wash and dry the potatoes. Cut each potato into four pieces so they’re all the same size. This will ensure they roast uniformly.

Add the potatoes to a mixing bowl and drizzle with olive oil. Season with oregano, garlic powder, salt, and black pepper. Toss until the potatoes are well coated with the seasonings.

Spread the seasoned potatoes on a baking sheet in a single layer. This prevents them from steaming and helps them roast properly.

Roast in the preheated oven for 15 minutes. Flip the potatoes and sprinkle the feta cheese over them.

Place the baking sheet back in the oven for 10 minutes or until the potatoes are cooked through.
