Chicken Pot Pie Noodle Skillet

This dish combines the creamy goodness of chicken pot pie with the heartiness of noodles, all while being lightened up to fit the Weight Watchers plan.

By making a few strategic ingredient swaps, I’ve managed to preserve all the flavors you love while keeping the dish low in points.

Imagine all the best parts of a traditional chicken pot pie, like the savory chicken, tender vegetables, and rich, creamy sauce, but without the heavy pastry crust. Instead, I use egg noodles to soak up all that delicious flavor, creating a dish that feels indulgent.

In addition to being Weight Watchers-friendly, this Chicken Pot Pie Noodle Skillet is also incredibly easy to prepare.

The entire meal comes together in one skillet, making it perfect for busy weeknights when you want a comforting meal without a lot of fuss. The ingredients are simple and likely already in your pantry and fridge.

The Ingredients

Chicken Breast: Lean and full of protein, this keeps the dish light and healthy. I used a rotisserie chicken to make this recipe even easier.

Egg Noodles: These absorb the creamy sauce beautifully, providing a hearty base.

Carrots and Peas: Classic pot pie vegetables that add color and nutrition. I used frozen carrots and peas.

Garlic and Onion: Essential for building a flavorful base.

Butter: This is used to cook the garlic and onion. I limited the amount of butter I used to save points.

All Purpose Flour: This helps to thicken the sauce.

Fat Free Half and Half: This is used instead of cream to reduce fat content without compromising on the creamy texture.

Low Sodium Chicken Broth: Helps to control sodium levels while providing a rich flavor.

How to Make Chicken Pot Pie Noodle Skillet

Use a food scale to weigh out 10 ounces of egg noodles.

Bring a pot of water to a boil and cook the egg noodles according to the directions on the package.

Melt the butter in a nonstick skillet. Add the onion and sauté until it is tender. Add the minced garlic and cook for 1 minute.

Sprinkle the flour over the sautéed vegetables, stirring until they are well-coated.

Gradually whisk in the chicken broth and fat-free half and half, stirring continuously to prevent lumps. Allow the mixture to simmer until the sauce thickens.

Stir in the chicken, peas, and carrots. Season with salt and pepper then add the egg noodles.

Mix well to ensure the noodles are fully coated in the creamy sauce.

Serving Suggestions

Garnish with fresh herbs like parsley if desired. It adds a pop of color and taste.

Consider serving this skillet with a fresh side salad. A simple mix of greens with a light vinaigrette can add a refreshing contrast to the rich and creamy main dish.

You could also serve it with steamed vegetables for an extra boost of nutrients.

Ingredients

  • 10 oz. egg noodles
  • 1 teaspoon butter
  • 1 small yellow onion
  • 2 cloves garlic, minced
  • 2 tablespoons all purpose flour
  • 1 cup chicken broth
  • 1 cup fat free half and half
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups frozen peas and carrots (thawed)
  • 2 cups boneless skinless chicken breast, cooked and shredded
