Roasted Potatoes with Feta

Ingredients

  • 1.5 lbs. petite gold potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/3 cup feta cheese

Instructions

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  • Wash and dry the potatoes. Cut each potato into four pieces so they're all the same size. Add the potatoes to a mixing bowl and drizzle with olive oil.
  • Season the potatoes with oregano, garlic powder, salt, and black pepper. Toss until the potatoes are well coated with the seasonings.
  • Spread the seasoned potatoes on a baking sheet in a single layer.
  • Roast in the preheated oven for 15 minutes. Flip the potatoes and sprinkle the feta cheese over them.
  • Place the baking sheet back in the oven for 10 minutes or until the potatoes are cooked through.
