Pickle Egg Rolls (Air Fryer or Oven Baked)
Pickles seem to be quite popular right now. There’s pickle flavored goldfish, Doritos, pretzels, and even rice cakes.
I thought I would try Pickle Egg Rolls on my quest to make a new pickle recipe.

You’ve got the salty pickles mixed with the cream cheese. They’re quite tasty!
Plus you can air fry or bake them. I prefer to air fry them because I thing they come out crispier. But if you don’t have an air fryer the oven will definitely work.
The Ingredients
Pickles: They are the star of the show! I used dill pickle spears that were 0 points.
Egg Roll Wrappers: You can usually find egg roll wrappers in the refrigerated dairy section.
Cream Cheese: To keep it lower in points I used reduced fat cream cheese. I think it tastes just like regular cream cheese and it softens when heated.
Garlic Powder: I mixed this the cream cheese for another level of flavor.
Ham: I prefer Boar’s Head whenever I buy lunch meat but any low point ham will work.

How to Make Pickle Egg Rolls
The cream cheese needs to be room temperature. That will make it much easier to work with. Add the garlic powder to the cream cheese and stir together.
Take one piece of ham and add a pickle to the center of it. Use a knife to smear on some of the cream cheese mixture.
Roll up the ham and add it to the center of an egg roll wrapper.

Fold up the bottom of the egg roll wrapper and tuck in the sides. Dab your finger in water and wet the edge of the egg roll wrapper then seal it closed.
Spray the egg rolls with zero point cooking oil. Add them to the air fryer basket in a single layer.
Air fry at 350 degrees for 8-10 minutes flipping halfway through. Once the egg roll wrapper is golden and crispy they are ready.
If you are making them in the oven simply place them on a baking sheet and bake at 350 degrees F for 12-14 minutes flipping halfway through.
Serving Suggestions
Pickle Egg Rolls are great as an appetizer or a snack.
I like to serve them with a low point ranch dip. If you like a little bit of heat you can mix together some Sriracha and low point ranch.
If you aren’t watching your calories you can also fry the egg rolls in oil. Add about a half inch of oil to a frying pan. Heat over medium heat then cook the egg rolls 1-2 minutes on each side.
