How to Make Low Carb Pumpkin Muffins
Preheat the oven to 350 degrees F. and line a muffin tin with 9 paper liners.
In a large bowl, whisk together pumpkin, eggs, almond milk, sweetener, and vanilla.
Stir in the almond flour, coconut flour, baking powder, pumpkin pie spice, cinnamon, and salt until smooth.
Evenly divide the batter into the muffin tins.
Bake for 18–22 minutes, or until a toothpick comes out clean.
Let cool and enjoy!
