Low Carb Pumpkin Muffins (Weight Watchers Friendly)

Ingredients

  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/3 cup monk fruit sweetener
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Preheat the oven to 350 degrees F. and line a muffin tin with 9 paper liners.
  • In a large bowl, whisk together pumpkin, eggs, almond milk, sweetener, and vanilla.
  • Add in the almond flour, coconut flour, baking powder, pumpkin pie spice, cinnamon, and salt. Stir until smooth.
  • Evenly divide the batter into the muffin tins.
  • Bake for 18-22 minutes, or until a toothpick comes out clean.
  • Let cool and enjoy!
