The Ingredients
Lean Ground Beef: Using 96% lean ground beef is a great source of high-quality protein, which is essential for muscle repair and growth.
Protein also helps keep you full longer, reducing the temptation to snack between meals.
With the current Weight Watchers plan 96% lean ground beef is 0 points.
Taco Seasoning: I used store-bought taco seasoning but you can also make your own. This helps to give the dish a ton of flavor.
Long Grain Rice: This provides a good source of carbohydrates, which are essential for energy.
Unlike simple carbs, long grain rice is a complex carbohydrate, meaning it breaks down more slowly in the body and provides a sustained energy release.
This helps to keep your blood sugar levels stable, avoiding the spikes and crashes that can lead to overeating or energy slumps.
Chicken Broth: The broth helps cook the rice, making it tender and flavorful without needing additional oils or fats.
Corn: Another nutritious ingredient, it’s high in fiber which helps aid in digestion.
Cheese: By opting for reduced-fat cheese, you still get the creamy, cheesy goodness that enhances the dish without the added calories and saturated fats found in full-fat cheese varieties.
Salsa: Choose a 0 point salsa to enhance the flavor of the dish without adding points.

How to Make Ground Beef Burrito Bowls
Add the ground beef to a skillet. Break it apart and cook it until no longer pink. Drain any excess grease.
Stir in the taco seasoning then add the rice, chicken broth, corn, and salsa. Bring it to a boil, cover, reduce heat, and simmer for 20 minutes.
Make sure to stir the mixture occasionally so the rice doesn’t stick together.
Divide the mixture into six servings and add your favorite toppings.

Top your burrito bowl with some of these classic toppings:

- Green onion
- Jalapenos
- Cilantro
Serving with a side of baked tortilla chips is also a great idea.
