Crispy Baked Chicken Thighs
Chicken thighs are tender, juicy, and much cheaper than chicken breasts.
They’re also easy to cook. If you overcook them slightly it’s ok, they’ll most likely still be juicy and delicious.
Unlike chicken breast, which can easily dry out if overcooked.

They’re also budget friendly, which is why this is another $10 meal.
I have a ton of recipes using boneless, skinless chicken breast because it’s zero points. Chicken thighs can easily be worked into a healthy diet, plus they’re about half the price.
Baking or air frying the chicken thighs is a great way to cook them since there are no additional points for oil.
Pairing the chicken thighs with a zero point vegetable or low point side salad is a great way to make this a low point meal.
What I Bought
I bought a four pack of chicken thighs for $6.73. A family of four can each eat one thigh.
Fresh green beans were $2.69 per lb. I bought just under a pound for $2.53.
All together I spent $9.26. Dinner for four people for under $10!
One chicken thigh plus a side of green beans was only 5 points per serving.
I had rice left over from when I made Chicken Teriyaki Bowls, so I served that as another side. I had 1/3 cup of white rice with my meal, which was an additional 2 points.
The other ingredients I consider to be “pantry staples”. The seasonings and olive oil spray are something I always have on hand.

How to Make Crispy Baked Chicken Thighs
Start by patting the chicken dry on both sides. This will help make sure the seasonings stick to the chicken breast.
In a small bowl mix together the garlic powder, onion powder, salt, black pepper, paprika, Italian seasoning, and dry mustard.
Season the bottom of the chicken thigh then place it in a baking sheet skin side up. Season the top of the chicken thighs and spray with olive oil spray.
Use your fingers to rub the seasoning on and under the chicken thighs.
Bake the chicken thighs for 30-40 minutes at 400 degrees F. or until it reaches an internal temperature of 165 degrees F.
During the last 5 minutes switch to broil so that the skin gets nice and crispy. Keep an eye on it so that it doesn’t burn.
Serving Suggestions
Any 0 point vegetable works as a perfect side dish. Green beans, broccoli, asparagus, carrots, or corn.
You can also serve it with a low point side salad or rice.
Crispy Baked Chicken Thighs

Ingredients
- 4 bone-in, skin on chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon dry mustard
- Olive oil spray
Instructions
- Preheat oven to 400 degrees F.
- Pat the chicken thighs dry on both sides.
- In a small bowl mix together the garlic powder, onion powder, salt, pepper, paprika, Italian seasoning, and dry mustard.
- Season the bottom of the chicken thighs then add them to a baking dish skin side up. Season the top of the chicken thigh then spray with olive oil spray. Rub the seasoning into the skin and under the skin.
- Bake the chicken thighs for 30-40 minutes or until the internal temperature reaches 165 degrees F. During the last 5 minutes switch to broil so the skin gets crispy. Keep an eye on it so that it doesn't burn.
