Cowboy Caviar Pasta Salad

If you’ve ever had cowboy caviar, you know it’s delicious.

Sometimes called Texas caviar, cowboy salsa, or black bean dip. Whatever you call it, it’s good!

Plus, most of the ingredients are healthy. I figured it would make a great base for a pasta salad.

The Ingredients

  • Pasta
  • Red pepper
  • Red onion
  • Cilantro
  • Limes
  • Black beans
  • Corn
  • Extra virgin olive oil
  • Garlic
  • Cumin, chili powder, and salt

This salad is filled with fresh vegetables, pasta, and a lightened up dressing.

It’s also a great side dish that you can make your own.

Add in tomatoes or avocado for more flavor. If you add avocado make sure you update the WW points.

I used canned corn but you could also use fresh corn.

Switch up the pasta shape. Rotini pasta is always a great option for pasta salad.

Since this is a side dish, I calculated it at 20 (1/2 cup) servings. Each serving is only 2 points.

Begin by preparing the pasta. Cook according to the directions on the box, then drain and rinse with cold water.

While that’s cooking, you want to make the dressing. In a small bowl, mix together the juice of three limes, minced garlic, extra virgin olive oil, cumin, chili powder, and salt.

Set the dressing aside and start chopping the vegetables.

Add the pasta to a large mixing bowl. Pour the dressing over the pasta and mix together.

Drain and rinse the black beans and add them to the pasta.

If you’re using canned corn, you want to drain it and add it to the pasta.

Next, add the red pepper, red onion, and cilantro to the pasta. Stir everything together.

It’s an easy and healthy pasta salad. With summer right around the corner, you’re going to want to save this recipe.

Serving Suggestions

This side dish is perfect for summer BBQs. Whether you’re having steak, chicken, ribs, or fish, cowboy caviar pasta salad goes great.

If you want a healthy and filling lunch, this is a great option. Adjust the serving size to 1 cup and it’s still only 4 points. Serve it with boneless, skinless chicken breast for 0 additional points.

Ingredients

  • 12 oz. medium shells (uncooked)
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped (around 1/2 cup)
  • 1/2 cup cilantro, chopped
  • 15.5 oz. black beans, drained and rinsed
  • 15 oz. corn, drained
  • Juice of 3 limes (about 6 tablespoons
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  • Cook the pasta according to the directions on the box. Drain and rinse with cold water.
  • In a small bowl, mix the lime juice, olive oil, garlic, cumin, chili powder, and salt.
  • Add the pasta to a large mixing bowl. Pour in the dressing and mix together.
  • Add the red pepper, red onion, cilantro, black beans, and corn. Mix together and serve.
