Broccoli Salad

This Broccoli Salad has been lightened up but is still full of flavor!

Just a few simple changes and it’s only 3 points per serving.

The best part is you won’t even notice.

The Ingredients

Broccoli: This is the star of the show. It’s 0 points so I added as much as I could. Plus it’s loaded with vitamins and so good for you.

Bacon: I used center cut bacon. It’s lower in points because the fatty ends of the bacon are removed.

Cheese: I used reduced fat shredded cheese. Mexican cheese is what I had on hand but you could also use reduced fat cheddar cheese.

Red onion: This adds a nice pop of flavor.

Sunflower seeds: This nut is rich in healthy fats, vitamins, and protein. It gives it a nice crunch and mild nut flavor.

The dressing: I used light mayonnaise, fat free sour cream, vinegar, granulated Splenda, salt, and black pepper.

Using light mayonnaise and fat free sour cream helped to drastically reduce the points. If I would have used 1/2 cup of regular mayonnaise it would have been 27 points. The light mayonnaise is only 11 points.

I mixed the light mayonnaise with fat free sour cream to cut back on points. It was only 1 point for 1/4 cup.

How to Make Broccoli Salad

The first thing I did was cook the bacon and drained it of any excess grease. Chop the bacon into small pieces. While that was cooking I started getting the broccoli ready.

When I make Broccoli Salad I don’t blanch the broccoli. I find it tends to make the salad watery. If you prefer blanching your salad you definitely can, I just use raw broccoli.

I cut the broccoli into bite-size pieces. I used two broccoli crowns which gave me 5 cups.

Add the broccoli to a large mixing bowl. Also add the cheese, red onion, bacon, and sunflower seeds.

In a separate mixing bowl add the light mayonnaise, fat free sour cream, vinegar, granulated Splenda, salt, and pepper.

Pour the dressing over the broccoli.

Stir to combine all of the ingredients. I like to refrigerate the Broccoli Salad for an hour before serving but that’s optional.

Ingredients

  • 5 cups broccoli (cut into bite-size pieces)
  • 6 slices center cut bacon, cooked, drained of grease, and chopped
  • 1/2 cup reduced fat cheddar or Mexican cheese, shredded
  • 1/4 cup red onion, chopped
  • 1/4 cup roasted sunflower seeds

For the dressing:

  • 1/2 cup light mayonnaise
  • 1/4 cup fat free sour cream
  • 1 tablespoon vinegar
  • 1 tablespoon granulated Splenda
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a small bowl mix together all of the dressing ingredients.
  • Add the broccoli, cooked bacon, cheese, red onion, and sunflower seeds to a large mixing bowl.
  • Pour the dressing over the broccoli mixture and mix until combined. Cover and refrigerate for 1 hour before serving.
