Chocolate Bark with Berries and Nuts
There’s something irresistible about a good chocolate bark – especially when it’s Weight Watchers friendly!
This recipe combines rich, sugar-free dark chocolate with the sweet-tart pop of freeze-dried strawberries, the crunch of roasted almonds, and a sprinkle of sea salt.
The result? A simple yet sophisticated treat that’s perfect for gifting, snacking, or satisfying late-night cravings without the sugar spike.

The Ingredients
Chocolate: I used Hershey’s zero sugar dark chocolate. It tastes great and doesn’t cause a sugar spike.
Freeze-dried Strawberries: This adds a pop of color, great flavor, and a crunch in every bite.
Almonds: You can use any nut you like. Pistachios, hazelnuts, and pecans are all great options.
Sea Salt: This helps to balance the sweetness and bitterness of the chocolate.

How to Make Chocolate Bark with Berries and Nuts
Line a baking sheet with parchment paper.
Measure 1/4 cup of the freeze-dried strawberries. Put them on a cutting board and chop them into small pieces.
Place 1-2 tablespoons of almonds in a zip-up bag. Use a meat mallet or a pan to break the almonds into small pieces.
Unwrap the chocolate bars and place them in a microwave-safe bowl. Microwave the chocolate in 30-second intervals, stirring between each, until smooth.
If you have a double boiler, you can use that to melt the chocolate.
Pour the melted chocolate onto the parchment and spread it into a thin, even layer (about 1/4-inch thick).
Sprinkle the chopped nuts, freeze-dried berries, and sea salt evenly over the chocolate while it’s still warm.
Place the baking sheet in the refrigerator for at least 30 minutes, or until completely set.
Once set, break the bark into 10 pieces.
Tips & Variations
Swap almonds for hazelnuts, pecans, or pistachios.
Use sugar-free white or milk chocolate for a marbled or layered effect.
For a nut-free version, try using pumpkin seeds or sunflower seeds.
