Cucumber Sandwiches

These cucumber sandwiches are the perfect appetizer for a party!

They are so good I sometimes eat them for lunch or a snack. They are light, but also filling.

I usually use a loaf of pumpernickel cocktail bread but my grocery store was out of it. I was really craving this so I had to improvise.

I bought a regular loaf of pumpernickel bread, cut off the crust (in a rectangular shape), then cut it into two squares. It worked out great!

With only four ingredients in this recipe, it is very easy to make. Even having to cut up the bread it only took me 15 minutes. I love a recipe that is tasty AND easy!

For my cucumber sandwiches I used Rubschlager pumpernickel cocktail bread. 20 slices was 14 points.

I also used Philadelphia reduced fat garden vegetable cream cheese. I used 1/2 tablespoon for each piece which was 10 tablespoons total. It was also 14 points for the cream cheese.

The cucumber and dill were both zero points.

How to Make Cucumber Sandwiches

Lay out the cocktail bread. Spread 1/2 tablespoon of cream cheese onto each slice of bread.

Add a cucumber slice to each piece of bread. Top the cucumber with a pinch of dill.

Ingredients

  • 20 slices Pumpernickel cocktail bread
  • 10 tablespoons garden vegetable reduced fat cream cheese
  • 1 cucumber, sliced
  • Dried dill

Instructions

  • Spread 1/2 tablespoon of cream cheese on each piece of bread.
  • Add a slice of cucumber.
  • Top each one with a pinch of dried dill.
