Whipped Feta Crostini with Hot Honey Drizzle

Ingredients

  • 24 (.5 oz.) slices of a French baguette
  • Olive oil spray

For the whipped feta:

  • 5 oz. reduced-fat feta cheese
  • 5 tablespoons fat-free sour cream
  • 1 teaspoon fresh lemon juice
  • 1 clove garlic
  • Pinch of oregano
  • Pinch of black pepper

For the hot honey drizzle:

  • 1/2 cup honey
  • 1/2 teaspoon apple cider vinegar
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Lay the bread slices on the baking sheet and spritz with olive oil. Bake 9-11 minutes, or until the bread is toasted.
  • Add the reduced-fat feta cheese, fat-free sour cream, lemon juice, garlic clove, oregano, and black pepper to a food processor. Run the food processor until the mixture is smooth with no lumps.
  • Add the honey, apple cider vinegar, and crushed red pepper flakes to a small saucepan. Bring the mixture to a simmer, then remove from heat and let it cool.
  • Spread each piece of bread with whipped feta, followed by a drizzle of the hot honey.

Notes

** You will not use all of the hot honey drizzle. The rest can be stored in an airtight container in the pantry. (You will use approximately 1 1/2 tablespoons of the hot honey drizzle which is how I calculated the Weight Watchers points.)
