Taco Bell Mexican Pizza

The other day I was curious to see how many points a Taco Bell Mexican Pizza would be. SEVENTEEN POINTS!!!!!

No way, totally not worth it. I knew I could easily make my own to satisfy my craving. 

So that’s exactly what I did. My Mexican pizza is only 7 points. Click here to track the points on your WW app.

With the new Weight Watchers program (12/25) 96% lean ground beef is zero points! If you prefer ground beef over turkey you can use that instead.

Instead of frying flour shells I bought corn tostada shells.

I also used reduced fat Mexican cheese and fat free refried beans. It was still delicious!

These Mexican Pizza’s can be topped with green onions, tomatoes, sour cream or olives. Just make sure you add any additional points if necessary.

Ingredients You Need

  • 96% lean ground beef or 99% fat free ground turkey breast
  • Taco seasoning
  • Fat free refried beans
  • Reduced fat Mexican cheese, shredded
  • Taco Bell milk sauce
  • Tostada shells
  • Optional toppings: tomatoes, green onions, fat free sour cream, olives

How to Make Taco Bell Mexican Pizza’s

Start by browning the ground beef or turkey. Drain any grease, add the taco seasoning and water. Bring to a simmer and cook for 3-4 minutes.

Place the refried beans in a microwave safe bowl. Cook on high 45 seconds. If the beans are thick I add a tablespoon or two of water and mix together.

Place one tostada shell on a baking sheet and spread 1/2 cup of the refried beans. Add 1/4 of the meat, then top with another tostada shell.

Add 2 tablespoons of the mild sauce to the tostada shell and 1/4 cup of the Mexican cheese.

Repeat the process with the other tostadas, then broil in the oven until the cheese is melted. Add any extra toppings and serve.

  • 1/2 lb. 99% fat free ground turkey breast or 96% lean ground beef (both meat choices are 0 points)
  • 2 teaspoons taco seasoning
  • 1/4 cup water
  • 1 cup fat free refried beans
  • 1 cup reduced fat Mexican cheese, shredded
  • 1/2 cup Taco Bell mild sauce (I found this in the Mexican isle at my local grocery store)
  • 8 tostada shells (the ones I used were 13 points for all 8, double check your points)
  • Extras such as chopped tomatoes, green onions, sour cream, olives (calculate any additional points if necessary)

Instructions

  • Brown the ground turkey in a frying pan. Add the taco seasoning and water and bring to a simmer. Continue to cook 3-4 minutes.
  • Put the refried beans in a microwave safe bowl. Cook on high for 45 seconds.
  • Take one tostada shell and spread 1/2 cup of the refried beans. Add 1/4 of the meat mixture, then top with another tostada shell.
  • Place tostada on a baking sheet. Add 2 tablespoons of the mild sauce and 1/4 cup of the cheese.
  • Make the other tostadas, then broil in the oven until the cheese is melted. Add any extra toppings. Enjoy!
