Upside Down Blueberry Cake

Can you believe this Upside Down Blueberry Cake is only 3 points per serving!?

The Ingredients

  • Pillsbury zero sugar classic yellow cake mix
  • Sprite Zero
  • 1 lb. blueberries
  • 1/2 cup granulated Splenda

How to Make Upside Down Blueberry Cake

Add the cake mix and Sprite Zero to a mixing bowl.

Use a hand-held mixer on low for 2 minutes.

For the blueberries I simply added 1/2 cup of granulated Splenda, stirred them up and added them to the 8×10 baking dish.

Next I poured the cake batter over the blueberries and baked the cake according to the directions on the box. It’s a very easy recipe!

Once the cake cools, flip it out of the pan (upside down) onto a serving platter.

  • 12 oz. Sprite Zero
  • 1 lb. blueberries
  • 1/2 cup granulated Splenda

Instructions

  • Preheat the oven to 350 degrees F.
  • Add the blueberries and Splenda to a mixing bowl and stir.
  • Add the cake mix and Sprite Zero to a mixing bowl. Use a hand-held mixer on low for 2 minutes.
  • Spray an 8×10 baking pan with no-stick cooking spray. Add the blueberries and make sure they are spread out evenly.
  • Pour the cake batter evenly over the blueberries.
  • Bake according to the directions on the box. Once the cake cools, flip it out of the pan (upside down) onto a serving platter. Enjoy!

  1. What if you do not have a 8×10? How would I calculate my points for blue if I use a 8×8 or 9×13?
