Tomato Tortellini Soup
After the snow storm we had last night this was the perfect soup to have!
It’s also a great vegetarian option. I used vegetable broth instead of chicken broth but you can use chicken broth if that’s all you have.
This soup makes six (2 cups) servings that are 5 points per serving.

I didn’t have to do much to make this soup low in points. The main thing was I didn’t use a lot of oil – only 1 teaspoon.
The crushed tomatoes are zero points.
Using cheese tortellini is where most of the points come from. I used 9 oz. which was 24 points. But it’s delicious and totally worth it.
The rest of the ingredients are little to no points. Onion, garlic, fat free half and half, sugar, vegetable broth and some seasonings.
Another great thing about this Tomato Tortellini Soup is that it only takes 30 minutes to make.
I used an immersion blender to blend the soup. If you don’t have one you can use a regular blender. Just make sure to let the soup cool before blending it.

Ingredients
- 1 teaspoon extra virgin olive oil
- 1 small yellow onion, chopped
- 3 garlic cloves, minced
- 56 oz. crushed tomatoes
- 4 cups vegetable broth
- 2 tablespoons fresh chopped basil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon sugar
- 9 oz. three cheese tortellini
- 3/4 cup fat-free half and half
Instructions
- Put the oil in a large pot over medium heat. Add the onions and cook for 3 minutes. Add the garlic and cook 1 minute longer.
- Add the crushed tomatoes, vegetable broth, basil, Italian seasoning, salt pepper and sugar. Bring to a simmer and cook for 15 minutes, stirring occasionally.
- Use an immersion blender to blend the soup. Add the tortellini and let it simmer for 7 minutes.
- Turn off the heat and stir in the half and half. Optional – top with more fresh basil.
