Tomato Basil Chicken

Ingredients

  • 14 1/2 oz. fire roasted diced tomatoes
  • 8 oz. tomato sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon fresh basil, chopped
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons reduced fat cream cheese

Instructions

  • Add the fire roasted tomatoes, tomato sauce, garlic, onion powder, salt and pepper to a slow cooker and stir together. Add the chicken breasts and cover with the tomato mixture.
  • Add the fresh basil. Cover the slow cooker and cook on low 4 hours.
  • Remove the chicken breasts then add the cream cheese. Whisk together until the cream cheese melts. Add the chicken back in.
  • Serve over noodles, rice or riced cauliflower. Add additional points if you use noodles or rice.
