Thai Peanut Noodles

- 8 oz. Linguine noodles
- 1/4 cup reduced fat peanut butter
- 2 tablespoons reduced-soduim soy sauce
- 2 garlic cloves, minced
- 2 tablespoons water
- 1 tablespoon rice wine vinegar
- 1 tablespoon granulated Splenda or other sugar substitute
- 1 teaspoon sesame oil
- 1/4 teaspoon ground ginger
- green onions (optional)
Cook linguine noodles according to the directions on the box. Drain.
Add the peanut butter, soy sauce, garlic, water, rice vinegar, Splenda, sesame oil and ginger to a pan. Whisk together over low heat. Once the peanut butter is melted and the sauce is smooth toss in the noodles. Serve and sprinkle the green onions over top.
