Thai Peanut Noodles

Ingredients

  • 8 oz. Linguine noodles
  • 1/4 cup reduced fat peanut butter
  • 2 tablespoons reduced-soduim soy sauce
  • 2 garlic cloves, minced
  • 2 tablespoons water
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon granulated Splenda or other sugar substitute
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • green onions (optional)

Instructions

  • Cook linguine noodles according to the directions on the box. Drain.
  • Add the peanut butter, soy sauce, garlic, water, rice vinegar, Splenda, sesame oil and ginger to a pan. Whisk together over low heat. Once the peanut butter is melted and the sauce is smooth toss in the noodles. Serve and sprinkle the green onions over top.
