Tater Tot Casserole

Ingredients

  • 10 1/2 oz. Healthy Request Cream of Chicken Condensed Soup
  • 1/2 cup fat-free sour cream
  • 2 fully cooked boneless, skinless chicken breasts (I used a cooked rotisserie chicken)
  • 1 cup riced cauliflower
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup reduced-fat Mexican cheese, shredded (or you can use reduced-fat cheddar cheese)
  • 20 frozen tater tots

Instructions

  • Preheat oven to 400 degrees F.
  • In a large mixing bowl add the cream of chicken soup and sour cream. Stir together, then add the chicken, cauliflower, garlic powder, onion powder, parsley, salt and pepper. Mix together.
  • Spray an 8x8 baking pan with no-stick cooking spray. Add the chicken mixture.
  • Sprinkle the cheese over the chicken mixture.
  • Add the tater tots, then bake for 30 minutes. Enjoy!
