Taco Stuffed Shells

Ingredients

  • 1 (12 oz.) box of jumbo shells
  • 1 lb. 95% lean ground beef
  • 1 packet of taco seasoning (plus 2/3 cup water)
  • 1 1/2 cups fat free salsa, divided
  • 1 cup reduced fat Mexican cheese, shredded, divided

Optional:

  • fat-free sour cream and green onions

Instructions

  • Preheat oven to 350 degrees F.
  • Cook shells according to the directions on the box.
  • Brown the ground beef and drain any fat. Add the taco seasoning and water then cook on medium heat for 5 minutes. Add 1 cup of salsa and 1/2 cup of Mexican cheese. Stir until the cheese is melted.
  • Stuff each of the shells with the meat mixture. Place them into a 9x13 baking pan sprayed with cooking spray.
  • Pour the remaining salsa and cheese over the noodles. Cover the pan and bake for 15 minutes or until the cheese is melted.
