Sliced Potato Pie

Yield: 6 servings (1 point per serving for purple, 2 points per serving for blue and green)

Ingredients

  • 1 lb. russet potatoes
  • 2 cloves garlic, minced
  • 1/2 teasoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup Parmesan cheese, shredded
  • Olive oil spray

Instructions

  • Preheat oven to 400 degrees F.
  • Use a mandoline to slice the potatoes. Add the potatoes to a mixing bowl.
  • Spray the potatoes with olive oil spray then add the garlic, Italian seasoning, salt, pepper and Parmesan cheese. Mix together.
  • Spray a pie pan with nonstick cooking spray. Layer the potatoes slices in the pie pan then cover with aluminum foil.
  • Bake for 20 minutes then remove the foil and bake 25 more minutes.
