Shrimp Boil Foil Packets

Ingredients

  • 1 lb. uncooked shrimp (peeled and deveined)
  • 6 oz. turkey kielbasa, cut into 1 inch pieces
  • 1/2 lb. baby potatoes
  • 2 ears of corn, cut into 1 inch pieces
  • 1/2 yellow onion, sliced thin
  • 1 tablespoon Old Bay Seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon parsley, chopped
  • Lemon wedges

Instructions

  • Preheat oven to 400 degrees or grill on high.
  • Bring a small pot of water to a boil. Add potatoes and cook for 10 minutes. Drain and let them cool.
  • In a large bowl add the shrimp, kielbasa, corn and onion.
  • Cut the potatoes into bite size pieces and add to the bowl. Add the Old Bay Seasoning, garlic powder and onion powder. Stir everything together.
  • Cut four large pieces of aluminum foil and spray with olive oil spray. Divide the shrimp mixture into four servings and add to each piece of foil.
  • Bring the top and bottom pieces of foil together and fold over then fold in the sides. Make sure the foil is completely sealed so the steam doesn't escape.
  • Bake in the oven or cook on the grill for 20 minutes.
