Sausage Tortellini Soup

Sausage Tortellini Soup is more than just a meal; it’s a comforting bowl of warmth perfect for cozy nights in.

This hearty soup will fill you up and warm you up, leaving you delightfully satisfied.

The combination of savory sausage, delectable cheese-stuffed tortellini, and nutrient-packed veggies transforms an ordinary soup into an exceptional meal.

How I Kept It Light:

The sausage in this soup adds so much flavor. 12 oz. of regular Italian pork sausage is a whopping 40 points!

I switched out that sausage for turkey sausage. The same amount is only 13 points. That saves 27 points!

Instead of using heavy cream, I used fat-free half and half. That also helped to save points.

Between the sausage, onions, and garlic there is so much flavor in the broth, without a ton of points.

How to Make Sausage Tortellini Soup:

Since I didn’t add oil to the recipe, I used a nonstick pot.

Start by adding the sausage and onion to the pot. Break up the sausage and cook it until it’s no longer pink.

Stir in the minced garlic and cook for 1 minute.

Add the chicken broth and bring to a boil. Reduce the heat so it is simmering, then add in the cheese tortellini.

Cook the cheese tortellini according to the directions on the package. Stir in the kale during the last 2 minutes of cook time.

Turn off the heat and stir in the half and half.

This soup is also great for meal prep. Its flavors bloom and intensify the longer it sits making it a delicious lunch option.

Perfect Pairings:

For a contrasting fresh note, consider accompanying your bowl of soup with a crisp green salad or some oven-roasted veggies.

If you have extra points, a warm, crusty roll would be perfect for dunking in the soup.

Ingredients

  • 12 oz. turkey sausage
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 32 oz. chicken broth
  • 1 cup cheese tortellini
  • 2 cups kale
  • 1/4 cup fat-free half and half
  • Salt and pepper, to taste
  • Crushed Red pepper (optional)

Instructions

  • Add the sausage and onion to a nonstick pot. Break up the sausage and cook until it's no longer pink.
  • Stir in the minced garlic and cook for 1 minute.
  • Add the chicken broth and bring to a boil. Reduce the heat so it's simmering, then add in the cheese tortellini.
  • Cook the cheese tortellini according to the directions on the package. Stir in the kale during the last 2 minutes of cook time.
  • Turn off the heat and stir in the half and half. Taste the broth and add salt and pepper, if necessary.
