Sausage & Potato Hash

Yield: 2 servings ( 3 points per serving for purple, 5 points for blue and 7 points for green)

Ingredients

  • 4 oz. Jennie O breakfast turkey sausage patties
  • 8 oz. Yukon gold potatoes, cut into small cubes
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped red pepper
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 2 eggs

Instructions

  • Spray a non-stick pan with olive oil then add the potatoes, onions, red pepper and garlic. Cook for 7 minutes stirring occasionally.
  • Push the potatoes to one side of the pan and add the turkey sausage. Break the sausage up into small pieces and cook thoroughly.
  • Stir the sausage and potatoes together and season with salt and pepper.
  • Cook the 2 eggs however you like them - sunny side up, scrambled, over easy etc.
  • Divide the hash into to bowls then top with eggs.
