Roasted Zucchini

Yield: 3 servings (1 point per serving for blue, green and purple)

Ingredients

  • 1 medium zucchini
  • 1 medium yellow squash
  • Olive oil cooking spray
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan cheese, shredded

Instructions

  • Preheat oven to 400 degrees F.
  • Cut the zucchini and squash into 1/4 inch rounds. Add them to a large bowl. Spray with olive oil cooking spray then add the garlic powder, salt and pepper. Mix together making sure to coat all of the zucchini.
  • Spray a sheet pan with cooking spray. Add the zucchini in a single layer then top with Parmesan cheese.
  • Cook for 10 minutes then serve.
