Quick and Cheesy Kielbasa Skillet

Ingredients

  • 13 oz. turkey kielbasa
  • 1 clove garlic, minced
  • 2 1/2 cups low sodium chicken broth
  • 1 cup long grain white rice
  • 12 oz. chopped broccoli (frozen)
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon black pepper

Instructions

  • Slice the turkey kielbasa into bite-size pieces.
  • Heat a nonstick skillet over medium heat. Add the turkey kielbasa and cook for 5 minutes or until it's slightly browned on both sides.
  • Add the minced garlic to the pan and cook for 1 minute.
  • Pour in the rice and chicken broth. Bring it to a boil, cover, then reduce the heat to low. Let it simmer for 20 minutes, stirring occasionally.
  • Cook the broccoli according to the directions on the package.
  • Once the 20 minutes is up stir in the cheese and broccoli.
