Pumpkin Pie Crisp
This Pumpkin Pie Crisp is soooooo good and only 3 points per serving!

It’s that time of year again. Pumpkin, pumpkin, pumpkin! I think you either love it or hate it.

If you love it you’re going to love this pumpkin dessert for only 3 points per serving. It’s a filling and low point dessert.
You can always add low point vanilla ice cream or fat free whipped cream. I usually add fat free whipped cream.
In the past I made a Strawberry Crisp and an Apple Crisp. They are both delicious, low point desserts.
To make this pumpkin pie crisp I started by mixing together the pumpkin, fat-free evaporated milk, eggs, pumpkin pie spice, cinnamon, vanilla extract and Splenda.
I poured it into a pie dish then baked it for 15 minutes.
While the pumpkin pie was baking I made the “crisp” part. I used quick oats, melted butter, vanilla extract, Splenda and cinnamon.
I pulled the pie out of the oven and added the crisp to it. Then I put the pie back in the oven for 30-35 minutes.

This is a great dessert for Thanksgiving or just for when you’re craving pumpkin!
Pumpkin Pie Crisp

Ingredients
For the pumpkin pie:
- 1 15 oz. can pumpkin
- 12 oz. fat-free evaporated milk
- 2 eggs
- 2 teaspoons pumpkin pie spice
- 1/8 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup granulated Splenda
For the crisp:
- 1 cup quick oats
- 1 1/2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 2 tablespoons granulated Splenda
- 1/8 teaspoon cinnamon
Instructions
- Preheat oven to 375 degrees F.
- In a mixing bowl stir together all of the pumpkin pie ingredients. Once it is smooth add it to a pie dish that has been sprayed with no-stick cooking spray.
- Bake for 10 minutes.
- While the pie bakes put all of the ingredients for the crisp together in a mixing bowl. Mix together, then evenly spread over the pumpkin pie at the end of the 10 minutes.
- Bake an additional 30-35 minutes.
