Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone mat. Add the pumpkin, Splenda, pumpkin pie spice, cinnamon, and vanilla extract to a medium bowl. Mix it together until well combined.
Unroll the crescent roll dough and break it apart along the perforated lines.
Add the crescent roll dough to a baking sheet. Spread the pumpkin mixture over the dough. Don't add too much pumpkin to the dough or it will ooze out. (I had some of the pumpkin mixture leftover.)
Roll up he crescent rolls, starting with the large edge of the triangle.
Bake for 9-11 minutes, or until the crescent rolls are golden. Let them cool slightly before serving.
