Potatoes O’Brien Breakfast Casserole

This Potatoes O’Brien Breakfast Casserole is perfect for a family breakfast, brunch, or meal prep.

It’s a delicious vegetarian breakfast but you can easily add turkey sausage or ham if you’re a meat lover.

You only need a handful of ingredients to make this easy breakfast casserole.

The Ingredients

Potatoes O’Brien: I bought frozen Potatoes O’Brien from the grocery store. You want to let them thaw before using them.

Three cups of Potatoes O’Brien only adds 6 points to the recipe.

Eggs: I used 6 eggs for this recipe. They’re a great source of protein and will help keep you full longer.

Skim Milk: Mixing milk with the eggs helps to create a creamy, custardy texture. Using skim milk helps to lower the points while still giving the casserole a smooth and soft consistency throughout the dish.

Shredded Cheese: I used reduced-fat Mexican cheese. It’s a lightened up combination of monterey jack, cheddar, colby, and mozzarella. You can also use reduced fat cheddar cheese.

Seasonings: I used salt and garlic powder to season the casserole.

How to Make Potatoes O’Brien Breakfast Casserole

Make sure you thaw the frozen Potatoes O’Brien before making the casserole. I usually leave them in the fridge the night before I’m making it.

Add the eggs, skim milk, garlic powder, and salt to a medium mixing bowl. Whisk the ingredients together.

Spray an 8×8 baking dish with nonstick cooking spray.

Place the thawed Potatoes O’Brien in the bottom of the baking dish.

Top the potatoes with the reduced-fat Mexican cheese.

Pour the egg mixture evenly over the potatoes and cheese.

Bake at 350 degrees F for 45-55 minutes, or until the eggs are set in the middle.

Serving Suggestions

A bowl of fresh fruit is a great 0 point option to serve with this breakfast casserole. Strawberries, blueberries, and melon add a refreshing contrast to the savory casserole.

  • 3 cups Potatoes O'Brien (thawed)
  • 6 eggs
  • 1/2 cup skim milk
  • 1 cup reduced-fat Mexican cheese, shredded
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350 degrees F. Spray an 8×8 baking dish with nonstick cooking spray.
  • Add the eggs, skim milk, garlic powder, and salt to a medium mixing bowl. Whisk the ingredients together.

Notes

To add chopped ham or turkey sausage: Only use 2 1/2 cups of Potatoes O’Brien and add 1/2 cup of ham or chopped turkey sausage.
