However, this classic dessert deserves a second look. With its distinctive ring shape and endless flavor possibilities, the Bundt cake can be a versatile canvas for creativity.
For my daughter’s last birthday she wanted a cake from Nothing Bundt Cakes. I had never had it before, so I wasn’t sure what to expect.
It was so good! She wanted white chocolate raspberry and it was delicious. Definitely not WW friendly, but it was her birthday so I indulged.

How I Lightened It Up:
For the cake, I used Pillsbury sugar free yellow cake. That helped to save a lot of points since there’s no sugar in it.
Instead of using oil and eggs to mix with the cake I used Sprite Zero. It’s a great way to save points since you’re not using any oil.
To make the topping, I mixed together sugar-free caramel sundae syrup and pecans.

How to Make a Pecan Upside Down Cake:
First, add the caramel sundae syrup to a microwave safe mixing bowl. Place it in the microwave for 15 seconds. This will make it easier to spread in the bundt pan.
Add the chopped pecans to the caramel syrup and mix together.
Spray the bundt pan with nonstick cooking spray, then add the caramel pecan mixture.

Next, add the cake mix to a medium mixing bowl. Pour in 12 ounces of Sprite Zero, this is in place of the eggs and oil.
Use a handheld mixer on medium for 2 minutes, then pour the cake batter over the caramel sauce.

Bake the cake at 325 degrees F. for 39-43 minutes. Once a toothpick is inserted in the middle of the cake comes out clean, the cake is ready.

One classic pairing that never disappoints is a scoop of vanilla ice cream on top of a warm slice of Pecan Upside Down Bundt Cake.

Ingredients
- 1 box Pillsbury sugar-free classic yellow cake
- 12 oz. Sprite Zero
- 1 cup sugar-free caramel sauce
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 325 degrees F. Spray a bundt cake pan with nonstick cooking spray.
- Add the caramel sauce to a microwave safe bowl. Microwave for 15 seconds.
- Stir in the chopped pecans, then add it to the bottom of the bundt cake pan.
- Add the cake mix to a medium mixing bowl. Pour in the sprite zero then mix together with a hand mixer on medium speed for two minutes.
- Pour the cake batter over the caramel pecan mixture.
- Bake 39-43 minutes, or until a toothpick inserted in the middle comes out clean.

Perhaps I”m missing it, but what size bundt pan are you using? I actually have three sizes! Look forward to hearing from you and I definitely plan to make for an upcoming birthday. Thank you.
Oh my! I didn’t realize there were so many bundt pan sizes. My pan doesn’t have the size on it, but I looked it up and for a box cake recipe it says to use a 10-12 cup bundt pan. I hope that helps!
