Peanut Butter and Jelly Whipped Cottage Cheese

The Ingredients

Fat-Free Cottage Cheese: Serving as the base, fat-free cottage cheese provides a rich source of protein while keeping the calorie count low.

PB2 Powder: This powdered peanut butter alternative is perfect for adding that beloved nutty flavor without the extra fat and calories. It’s a versatile ingredient that can be easily mixed to achieve the right consistency.

Sugar-Free Jelly: To complete the classic PB&J profile, sugar-free jelly adds a touch of sweetness without the added sugars.

Water: Mixing water with the PB2 peanut butter powder turns it into a creamy, peanut butter like texture.

I also mixed water with the jelly to make it easier to spread.

How to Make Peanut Butter and Jelly Whipped Cottage Cheese

To achieve the perfect texture for this high protein snack, start by placing 1 cup of fat-free cottage cheese into a food processor.

The goal is to create a smooth, whipped consistency, which can be accomplished by pureeing the cottage cheese. This step not only improves the texture but also helps the cottage cheese blend seamlessly with the other ingredients.

Pour the whipped cottage cheese into a small mixing bowl.

Pour the PB2 powder into a mixing bowl. Slowly add water while stirring to ensure a smooth and creamy consistency.

I mixed 2 tablespoons of PB2 powder with 2 1/2 tablespoons of water.

Pour the PB2 mixture into the whipped cottage cheese. Also add 1 tablespoon of granulated Splenda. Mix to combine the ingredients.

Top the peanut butter whipped cottage cheese with sugar-free strawberry jelly.

This whipped cottage cheese has all of the flavors of a peanut butter and jelly sandwich. It’s so good!

Ingredients

  • 2 tablespoons PB2 peanut butter powder
  • 2 1/2 tablespoons water
  • 1 tablespoon granulated Splenda
  • 1 tablespoon sugar-free strawberry jelly

Instructions

  • Add the cottage cheese to a food processor. Run until the cottage cheese is smooth and free of chunks. Add the whipped cottage cheese to a small mixing bowl.
  • Stir together the PB2 powder and water. Pour into the whipped cottage cheese. Also add the Splenda. Mix together to combine.
  • Drizzle the sugar-free jelly on top. Enjoy!
