One Pot Pasta (Ten Dollar Meal)

Ingredients

  • 8 oz. penne pasta
  • 1 cup Roma tomatoes, chopped
  • 1/2 cup yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 14 oz. chicken broth (or vegetable broth)
  • 16 oz. water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese

Instructions

  • Add the pasta, tomatoes, onion, garlic, basil, chicken broth, water, salt, and pepper to a 12" skillet.
  • Heat on high until it comes to a boil, stirring occasionally.
  • Reduce the heat to medium-high and set the timer for 10 minutes, occasionally stirring the noodles so they don't stick together.
  • Divide into 4 servings and top with Parmesan cheese and additional fresh basil.
