One Pan Chicken Fajitas
You better hold on to your socks….because these fajitas are going to knock em off!
They are delicious, easy to make and low in points. If you leave out the shell they are 0 points!
I used a tortilla (1 point), some fat free sour cream (1 point) and fat free salsa.

My dinner was only 2 points.

Here’s what you need:
- Chicken breast (1 lb.)
- Green pepper
- Red pepper
- Yellow pepper
- Onion
- Seasonings – chili powder, salt, cumin, oregano, onion powder, garlic powder, and black pepper
How to Make One Pan Chicken Fajitas
Start by preheating the oven to 400 degrees F. Line a baking sheet with parchment paper or spray with nonstick cooking spray.
Add the chili powder, salt, cumin, oregano, onion powder, garlic powder, and black pepper in a small mixing bowl. Whisk the ingredients together.
Slice the green, red, yellow peppers, and onions. Add them to the baking sheet.
Cut the chicken into long thin strips and place it on top of the veggies.
Sprinkle the chicken with 1/2 of the seasoning. (Save the other half for the next time you make it.)
Bake for 25 minutes stirring halfway through.
Serving Suggestions
If you want to keep this recipe at 0 points you can eat it as is.
You can add a low point tortilla to serve the fajitas. Mission Carb Balance tortillas are only 2 points each and Ole Xtreme high fiber tortillas are only 1 point each.
Fat-free sour cream is always a must for me. You can have up to 1/4 cup for only 1 point.
Salsa or pico de gallo are great 0 point options.
Avocado or guacamole are great with fajitas too, just be sure to add any extra points.
These chicken fajitas are great the next day. They’re perfect for meal prep!
This is a great recipe for those crazy days during the week when you want to cook dinner, but you don’t have a lot of time.

Ingredients
- 1 lb. boneless, skinless chicken breasts
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 1 small onion
- 1 tablespoon chili powder
- 1/2 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions

I too would like to know why a shell wasn’t listed. It’s of course zero points because of the chicken and veggies. But why not say it’s 3 points and count a tortilla… 🤔
The recipe itself is for the chicken fajita portion. If you eat just the chicken and veggies it’s zero points. I offer a suggestion to add a low point tortilla and other add-on’s because I know some people don’t want to eat just the chicken fajita portion. I hope that answers your question 😊

Made this tonight for dinner. We both loved it. I didn’t have all the spices so I used taco seasoning that I had. Ate it with low carb tortillas.

My sister was on WW and sent me this recipe while I was on low carb( NOT keto). I made it & loved it! Every time my Harris teeter grocery store has cut-up fajita veggies reduced in cost, that’s a sign that it’s time for me to make it again! I use a silicone liner on the bottom of my toaster oven pan, so no need to spray so food doesn’t stick. My sister had used all the spice mixture on it instead of just half, so that’s what I do too! And we love it that way! I won’t use a tortilla tonight, but tomorrow will have the left-overs in a wrap or a pita. I am on WW and I love that something so good is zero points! When people comment that they are looking for low point meals, this is one recipe I give the url for. Quick & easy and so-o-o-o good! Thanks!
