Olive Garden Chicken and Gnocchi Soup (Copycat Recipe)

Ingredients

  • 1/2 cup celery, diced
  • 1/2 cup onion, diced
  • 1/2 cup carrots, shredded
  • 1 teaspoon butter
  • 1 teaspoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon all purpose flour
  • 4 cups fat-free chicken broth
  • 1 cup fat free half and half
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 oz. gnocchi
  • 2 cups boneless, skinless chicken breasts, cooked and shredded
  • 1 cup fresh baby spinach

Instructions

  • Heat the butter and olive oil in a Dutch oven or large pot. Add the celery, onion and carrots, cook for 5 minutes. Add the garlic and cook 30 seconds.
  • Add the flour and mix together. Slowly stir in the chicken broth, then the half and half. Add in the Italian seasoning, salt and pepper.
  • Bring to a light boil then let the soup simmer for 5 minutes.
  • Add the chicken and gnocchi. Cook for 3 minutes or until the gnocchi is cooked through.
  • Stir in the spinach and cook for 2 minutes. Enjoy!
