Olive Garden Chicken and Gnocchi Soup (Copycat Recipe)

Ingredients

celery, diced

onion, diced
1/2

carrots, shredded

teaspoon
butter

extra virgin olive oil

cloves
garlic, minced

tablespoon
all purpose flour

fat-free chicken broth

cup
fat free half and half
1/2
teaspoon
Italian seasoning

teaspoon

gnocchi

boneless, skinless chicken breasts, cooked and shredded

fresh baby spinach
Instructions
Heat the butter and olive oil in a
Dutch oven
or large pot. Add the celery, onion and carrots, cook for 5 minutes. Add the garlic and cook 30 seconds.
Add the flour and mix together. Slowly stir in the chicken broth, then the half and half. Add in the Italian seasoning, salt and pepper.
Bring to a light boil then let the soup simmer for 5 minutes.
Add the chicken and gnocchi. Cook for 3 minutes or until the gnocchi is cooked through.
Stir in the spinach and cook for 2 minutes. Enjoy!
