Mexican Lasagna Roll Ups

This delicious dish is lightened up to fit your healthy dinner needs while still delivering on taste.

By making simple swaps like using 96% lean ground beef, reduced-fat Mexican cheese, and fat-free cottage cheese, you can enjoy a delicious meal without worrying about extra points.

Whether you’re cooking for a family or just yourself, this recipe is sure to become a new favorite.

The Ingredients

Ground Beef: Using 96% lean ground beef helps to reduce the fat content while still providing protein.

Taco Seasoning: You can use store bought seasoning or make your own. You need 1 tablespoon which is 0 points.

Salsa: I used Pace chunky medium salsa. You don’t want to use a salsa that is too runny.

The salsa is divided between the meat mixture and to pour over the lasagna roll ups.

Petite Diced Tomatoes: This is another 0 point ingredient. It’s also used in the meat mixture and to pour over the lasagna.

Fat-Free Cottage Cheese: This adds creaminess and texture while adding 0 points.

Egg: An egg is added to the cottage cheese to bind it and add richness.

Lasagna Noodles: This is the star of the show. I like lasagna roll ups because it’s easy for counting Weight Watchers points and portion control.

Reduced-Fat Mexican Cheese: I used this cheese to top the Mexican Lasagna Roll Ups. It’s less points than regular Mexican cheese but still melts good.

How to Make Mexican Lasagna Roll Ups

Cook and drain the lasagna noodles according to the directions on the box. I usually boil the noodles 1 minute less than it recommends since they will also be baked.

Heat a nonstick skillet over medium-high heat and add the 96% lean ground beef. Break up the meat, ensuring it cooks evenly.

Continue cooking until the beef is browned and no longer pink. Given the leanness of the beef, there should be minimal excess fat, but be sure to drain any that remains.

Season the ground beef with the taco seasoning and add 1/4 cup of water. Stir to combine and let the meat cook for 2 minutes.

Add 1 cup of the salsa and 1/2 cup of the diced tomatoes (with liquid) to a small mixing bowl. Stir together and set aside.

Pour the remaining salsa and diced tomatoes (with liquid) into the meat mixture. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.

Let the meat mixture cool slightly.

Add 1 cup of fat-free cottage cheese and an egg to a small bowl. Stir to combine the mixture.

Lay out your cooked lasagna noodles on a clean surface, ensuring they’re not overlapping to avoid sticking.

Spray an 8×8 baking dish with nonstick cooking spray then add a couple spoonfuls of the salsa/diced tomato mixture. This will help keep the noodles from sticking.

Spread a couple of tablespoons of the cottage cheese mixture over each noodle.

Next, add a couple of tablespoons of the meat mixture to each lasagna noodle.

Roll the lasagna noodle up starting at the bottom. Place the filled noodle in the baking dish seam side down.

Continue until all six lasagna noodles are rolled up and in the baking dish.

Pour the salsa/diced tomato mixture over the rolled up lasagna noodles. Sprinkle the reduced-fat Mexican cheese over the lasagna roll ups.

Bake at 350 degrees F. 30-35 minutes, or until the cheese is melted and the lasagna roll ups are heated through.

Serving Suggestions

For an extra layer of flavor, add cilantro or a dollop of fat-free sour cream. I never eat these roll ups without sour cream.

If you prefer a bit more heat, you can sprinkle some sliced jalapeños on top or add a dash of hot sauce.

For a balanced meal, consider serving the roll ups with a fresh green salad topped with avocado and cherry tomatoes.

A side of black beans or corn salsa can also enhance the Mexican-inspired flavors beautifully.

  • Bake 30-35 minutes, or until the cheese is melted and the roll ups are heated through.
