Lucky Charms Cupcakes
These Lucky Charm Cupcakes are so fun!
They remind me of being a kid while satisfying my sweet tooth.
They’re also Weight Watchers friendly so you can indulge without feeling guilty.

Lucky Charms was one of my favorite cereals growing up, so making a dessert with it seemed like a no brainer.
To keep it WW friendly, I used Pillsbury sugar free yellow cake mix.
I’ve also used this cake mix for Banana Pudding Cupcakes, Strawberry Cupcakes, and Orange Creamsicle Cupcakes.
Most of the cupcake recipes I have are around 2-3 points. You can search “cupcakes” to find all of the recipes.
Instead of using eggs and oil for the cake mix I used Sprite Zero. So you only need the two ingredients to make the cake part of the cupcakes.
It sounds weird that soda and cake mix will produce a fluffy cake, but it does.
Baked goods need a leavening agent to help them rise and turn out light and fluffy. The carbon dioxide bubbles in soda act as the leavening agent for this recipe.

How to Make Lucky Charms Cupcakes
Chop 1/2 cup of the Lucky Charms marshmallows. They will be added to the cake batter. It’s kind of like sprinkles in birthday cake batter. They’ll add a little pop of color and flavor.
In a large mixing bowl, add the cake mix and Sprite Zero. Use a handheld mixer and mix on low for 2 minutes. After that, stir in the marshmallow pieces.
Line a cupcake pan with liners and fill each one up halfway with the cupcake batter. Bake the cupcakes for 19-23 minutes.
Let the cupcakes cool completely before frosting them.
Add the cream cheese, powdered sugar, and vanilla extract to a mixing bowl and use a hand mixer to combine.
Measure 3/4 cup of the cereal portion of the Lucky Charms. Add them to a zip-up bag and use a meat mallet to break it up. You want it to be a crumb like consistency.
Spread the cream cheese frosting over each cupcake. Top the cream cheese frosting with the cereal crumbs. I also added a couple of marshmallows to each cupcake.

Ingredients
- 1 (16 oz.) box Pillsbury sugar free moist yellow cake
- 12 oz. Sprite Zero or Diet 7UP
- 1/2 cup Lucky Charms marshmallows (chopped into small pieces)
- 8 oz. reduced fat cream cheese
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 3/4 cup Lucky Charms cereal (without marshmallows)
Instructions
- Preheat oven to 350 degrees F. Place cupcake liners in a cupcake pan.
- In a large mixing bowl, add the cake mix and Sprite Zero. Use a handheld mixer and mix on low for 2 minutes. After that, stir in the chopped marshmallows.
- Fill each cupcake liner halfway with the cupcake batter. Bake the cupcakes 19-23 minutes. Let the cupcakes cool completely before decorating them.
- Add the cream cheese, powdered sugar, and vanilla extract to a mixing bowl and use a handheld mixer to combine.
- Add the cereal portion of the Lucky Charms to a zip-up bag. Use a meat mallet to break it up. You want it to be a crumb like consistency.
- Spread the cream cheese frosting over each cupcake. Top the cream cheese frosting with the cereal crumbs. I also added a couple of marshmallows to each cupcake.
